CRUNCHY FRUIT SLICE

Makes 12

Ingredients

50g butter

½ cup raw or demarara sugar

¼ cup golden syrup or honey

90g (3/4 cup) pepitas (pumpkin seeds)

90g (3/4 cup) sunflower seed kernels

2 tablespoons sesame seeds

1 vita brit or weetbix crushed

½ cup SR flour

½ cup rolled oats 

½ cup dried fruit of your choice (chopped apricots, dates, cranberries or sultanas)

 

Dark chocolate (if desired)

Method

Peheat oven to 170⁰C. Line baking tray with baking paper, leaving overhang on 2 sides.

Place butter, sugar and golden syrup in medium saucepan. Stir over moderate heat until butter is melted and sugar is dissolved. Allow to cool for about 5 mins.

Add seeds, cereal, flour and fruit. Mix well until ingredients are well coated and combined. Press mixture evenly into prepared pan.

Bake for 25 mins until set and golden. Cool completely in pan. Drizzle with melted chocolate (if desired). When set, lift slice from baking tray and cut on chopping board into 12 bars.

Wrap individually using baking paper and store in airtight container.
